Autumn apple crumpets

Yeasted oat flour crumpets fried in coconut oil with a thin slice of apple pressed into each one and cinnamon sprinkled over at the end.

Ingredients
  

  • 1 and 1/2 cups warm plant-based drink
  • 1 egg
  • 2 and 1/2-3 cups oat flour
  • 10 g yeast
  • 1 tablespoon coconut sugar
  • 1 big apple
  • 1 teaspoon coconut oil
  • a pinch of cinnamon

Method
 

  1. Warm the plant-based drink until it feels pleasantly warm to the finger, not hot.
  2. Crumble fresh yeast into the warm drink with the coconut sugar and leave it 10 minutes until it foams, or stir instant dry yeast straight into the flour.
  3. Mix all the batter ingredients into a thick batter that drops slowly off a spoon.
  4. Cover the bowl and leave the batter in a warm place for 30 to 60 minutes, until the surface is bubbly and the mass has risen.
  5. Heat the coconut oil in a pan over medium heat and spoon the batter in.
  6. Press a thin slice of apple into the top of each crumpet and fry until the edges set and bubbles show, then turn and finish the second side until light golden brown.
  7. Sprinkle the hot crumpets with cinnamon and serve.
