Greek grilled chicken bowl

A Greek style bowl assembled in a few minutes: brown rice, chicken breast grilled dry in a pan, crisp vegetables, olives and feta, dressed with olive oil and lemon.

Ingredients
  

  • 50 g brown rice
  • 100 g chicken breast
  • 2 leaves iceberg lettuce
  • 1/2 tomato
  • 1/2 cucumber
  • 1/4 red onion
  • 6 black marinated olives
  • 1 slice 12% fat feta cheese
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 pinches salt
  • 2 pinches pepper
  • 1/2 teaspoon dried thyme

Method
 

  1. Cook the brown rice according to the instructions on the packet, keeping it loose rather than overcooked, then spread it out to cool.
  2. Cut the chicken breast into thin strips, season with half the salt and pepper and grill in a hot pan with no oil until golden.
  3. Chop the lettuce and finely dice the tomato, cucumber and onion. Cut the olives in half.
  4. Put the lettuce, cooled rice, vegetables and crumbled feta into a bowl. Add the olive oil, lemon juice, the rest of the salt and pepper and the thyme, then mix gently.
  5. Arrange the grilled chicken on top and serve.

Notes

Nutritional values and the number of servings are approximate. Dress the bowl right before eating, or pack the dressing separately if you are taking it to work.
