Oven baked asparagus with bacon and a fried egg

Asparagus roasted with olive oil, served with bacon and an egg fried in ghee. A fat and protein breakfast that bakes in one tray.

Ingredients
  

  • 10 asparagus spears
  • a few rashers of bacon
  • 1 tablespoon ghee clarified butter
  • 1 teaspoon olive oil
  • 2 eggs
  • a pinch of salt
  • a pinch of black pepper

Method
 

  1. Wash the asparagus spears and remove the woody ends.

  2. Line a baking tray with baking paper and place the spears on it.

  3. Sprinkle them with olive oil, season with salt and pepper and bake at 180 C for about 25 minutes.

  4. Cut the bacon into rashers and fry it.

  5. Fry the egg in the ghee butter.

  6. Serve the asparagus with the bacon and the egg.
