Chocolate Muffins with Fruit
Are there any muffin fans here? I make them quite often and add variety using different ingredients. I used frozen raspberries for this recipe but you can just as well use other fruit, like blueberries, strawberries or blackcurrants. Chocolate flavor goes well with sour fruits, as they balance the sweetness of the muffins.
Preparation:
I mixed the dry ingredients in a bowl: flour, cocoa, sugar, soda, and salt. Then I mixed the rice drink, melted coconut oil, egg, and lemon juice in another bowl. I quickly combined the dry and wet ingredients. Finally, I gently stirred in the raspberries. I poured the mixture into muffin molds and baked at 180°C for about 20-25 minutes. When ready, I left them to cool.
I served the muffins with homemade apple mousse ?
