Christmas eve mushroom soup with gluten free noodles
We still have a bit of time till Christmas, but my head is full of new, healthy recipes inspired by our traditions.
In some regions of our country on Christmas Eve people prepare borscht, while in others its mushroom soup. My suggestion for the mushroom soup regions is an option with dried fruits and gluten-free noodles. Personally, I love the smell of mushrooms in the air during the Christmas Eve afternoon 🙂

Christmas eve mushroom soup with gluten free noodles
Preparation:
Pour mushrooms with warm water (about 1 liter, so that the water will cover the mushrooms) and leave it to soak overnight. Then cook them to softness in the same water – for about 40 minutes.
In a separate saucepan, prepare 2 liters of water. Add the peeled vegetables, onions and spices. Cook until vegetables are soft. Then remove it from the broth, add mushrooms together with the water. Cook together for about 15 minutes and add the chopped dill
Gluten free noodles
Ingredients:
- 6 tablespoon of flour – gluten free pizza mix or 3 tablespoons of rice flour and 3 tablespoon of potato flour
- 2 – 3 tablespoon of water
- 2 eggs
- 1 teaspoon of sea salt
Preparation:
Break the eggs and place in a glass, add the flour, salt, water and mix vigorously.
At the same time, bring the water to a boiling point and add the pinch of salt. With a slow, long stream, gently pour the dumplings into the pot of boiling water. Stir very gentle, to leave the structure and shape of the noodles. Best to serve immediately after preparation
