Cod with kale
I recently wrote that it is difficult for me to become a vegetarian because I can not give up fish.
Why? Because fish are very healthy.
Fats from fish are a source of polyunsaturated fatty acids and vitamin D, which are necessary for us to function properly. In addition, sea fish provide us with iodine.
You may want to include fish in your menu 2-3 times a week, but as they have the ability to accumulate pollutants from the waters in which they live, you should check their origin. I recommend the web site http://ryby.wwf.pl/poradnik/ where you will find the exact list of fish that you can buy without compromising your health and the environment.
Campaigners for the conservation of marine and marine biological diversity also point out that we should not buy certain fish because they are endangered.
And what fish do I have today? 🙂 … it’s cod.
Preparation:
I cleaned the cod, rinsed, sliced and placed in the fridge for an hour. Then I baked it for 25 minutes at 180 ° C. In the meantime I cut the oyster and kale and I fried it with ghee butter. I sliced the parsnips, poured water and simmered to softness with spices. I served it with the baked cod, and finally sprinkled with pumpkin seeds.
Enjoy!
