Cream of Green Peas
Have you also been looking forward to spring? Nothing can beat the energy boost that a sunny morning gives me. Now it’s a good time to invite spring to your kitchen as well and introduce some green energy to your meals! Cream of peas is a real health bomb: it contains vitamins A, C, E, K, B group, potassium, and iron – and the list goes on 🙂
Preparation:
I diced the onion, sliced the leek, and finely chopped the ginger. I melted the clarified butter in a pot, and slightly fried the chopped ingredients with the addition of soy sauce. I added frozen peas, poured in the water and boiled until tender. I added coconut milk, salt, and pepper and blended the soup until smooth. Before serving, I sprinkled the soup with pumpkin seeds.
