Creamy Carrot Soup with Orange
How about a quick and warming soup? In winter, it is my number one on the menu! What’s more, my daughters love cream of carrot soup so we often have it at home as you can prepare it really fast and then easily reheat it when you’re back home from a long walk. It quickly warms you up and replenishes the energy.
Preparation:
I peeled the onion and garlic, chopped them finely and fried them in a pot in clarified butter. Next, I peeled the carrots and grated the ginger. I cut the carrots into slices and added them to the onion along with the ginger. I fried it all together for a few minutes. While frying, I added turmeric. I covered it all with stock and coconut drink, and put the lid on. I cooked the soup for about 15 minutes until the carrots were tender. Finally, I added orange juice and seasoned it to taste. I blended the soup until smooth.
