Cucumber & Mint Cold Soup
Summer is at its peak! I hope you’re enjoying the sun and recharging your vitamin D supplies 🙂 During the summer months, it is recommended to stay at least 15 minutes a day in sunny places so that vitamin D is synthesized by the skin (more about it HERE).
It’s also a great idea to bring some summer into the kitchen but I know that when it’s hot the desire to prepare any meals drops sharply. My idea In such situations is to focus on quick, refreshing dishes, full of vegetables and fruits with a high water content, which will additionally ensure proper hydration of the body. Reach for cucumbers, tomatoes, watermelons, melons, berries. My recipe for today is a super-quick cucumber cold soup with a hint of fresh mint 🙂
Preparation:
I peeled the cucumber, cut it in half and seeded it. Next, I cut it into chunks, blended it with avocado, lemon juice, maple syrup, mint, and chili pepper. I seasoned the cold soup with salt and pepper and put it in the fridge.
Before serving, I sprinkled the chilled soup with almond flakes.
