Eggplant, Apricot and Vinaigrette Salad
Hello everyone this January morning! If you need an energy boost that tastes excellent and at the same time looks beautiful, you’ve come to the right place. Let me show you a very simple salad that each of you can prepare at home, also in winter. After all, we must not forget to eat vegetables and fruit in winter 🙂
Preparation:
I sliced the eggplant, sprinkled it with olive oil and seasoned it with salt and pepper. Then I roasted it for 20 minutes in an oven preheated to 200℃. You can also grill it in a grill pan to speed up the process of preparing the salad 🙂
I washed the remaining vegetables, cut them into pieces. Then I put them into a bowl along with the eggplant.
I prepared the sauce: I combined the olive oil, mustard, honey and lemon juice. You can adjust the consistency of the sauce to your liking by adding a little water. I poured the sauce over the salad and sprinkled it with sprouts.
