Gluten free dumplings with beetroot and dates – something for small and big kids for Christmas
Your kids are not into the traditional Christmas Eve dumplings?
I have an alternative that should be perfect for every kid. The proposal may not sound very festive for you, but there is nothing we cant do for our little ones 🙂
For the stuffing we will use beetroots with a bit of dates and cinnamon. I think that not only the youngest children will try this combination 🙂
Gluten free dumplings with beetroot and dates
Preparation:
Place all ingredients for the dough in the food processor. Slowly add water, and keep stirring to the point when the dough begins to form. Then form a ball, wrap in paper and put it for 15 minutes in the refrigerator.
in the meantime, blend the cooked beets with spices and dates previously soaked (place the date for about 15 minutes in boiling water).
Sprinkle some flour on the pastry board. Take out the dough from the refrigerator and divide it into 3 parts. Thinly roll the dough,and cut equal circle with a cup. For each circle of dough place about 1/2 spoon of stuffing and seal the dumplings.
In the meantime, boil water in a pot. Add 1 tablespoon of fat and wait for the water to boil, add 5 pieces of dumplings at one time. Cook until they float back to the surface. After cooked place in on a plate and pour a little fat, so they will not stick together.
Note if the dough is too sticky, remember that you can add more flour
