Buckwheat Pancakes with Basil-Flavored Curd Cheese
Have you managed to stick to your New Year’s healthy habit resolutions so far? Or, are you still in the holiday season mood? I hope that this recipe will be another inspiration for you to prepare a delicious, nutritious dinner. I’m positive lots of people find pancakes delicious! This time I prepared them in a savory way.
Preparation:
I mixed buckwheat and rice flour. I cracked in the egg, added coconut drink, water, and blended everything until smooth. I heated the clarified butter in a frying pan, scooped the butter onto the pan and fried the pancakes.
I chopped the herbs and mixed them with cheese, yogurt, salt, and pepper. Spread the mixture on each pancake and rolled them.
FInally, I prepared the sauce: I mixed yogurt with pressed garlic, chopped dill, salt, pepper and paprika. I served the pancakes with fresh spinach leaves, cherry tomatoes and yoghurt-based sauce 🙂
