Quick and Easy Creamy Carrot Soup
Sometimes we don’t need lots of ingredients or hours of preparation to make a delicious meal. It’s enough to get what’s easily available and add the right spices. To prepare this soup, I used carrots, which are rich in beta-carotene, i.e. provitamin A ?
Preparation:
I heated the ghee in a pot and fried finely chopped onion and garlic. Then I added chopped carrots and potatoes into the pot and covered them with water. Next, I cooked the vegetables until tender, blended them and added the spices and mustard. I poured the creamy soup into a bowl, garnished it with basil leaves and sprinkled with some freshly ground pepper.
