Steamed Fish with Vegetables & a Light Salad
Cod is a good source of protein. Steamed and served with a vegetable salad, it is a great idea for a light dinner, especially on hot days, when you want to eat quick, simple dishes. Use the vegetables that you already have in the kitchen, add a little olive oil and a delicious, nutritious supper is ready ?
Preparation:
I seasoned the fish with salt, pepper, herbes de Provence and sprinkled with lemon juice. I cut the carrot and potato into smaller pieces. I steamed the fish with chopped vegetables until tender.
I halved the olives, cut the tomatoes into quarters and the cucumber into half moons. I mixed the spinach with rocket leaves, cherry tomatoes, cucumber, olives and olive oil. I put the salad on a plate, added the steamed vegetables and put the fish on top. I sprinkled it all with beetroot sprouts ?
