STUFFED EGGPLANT
Did you know that eggplants are low-calorie products? In 100 g of eggplant you’ll find just 20 calories.
It’s rich in fiber and it improves metabolism. Eggplants that are big and ripe tend to be a bit bitter. To get rid of its bitterness slice it, sprinkle it with salt and leave it for half an hour. The juice that shows up, sort of, takes away the bitterness. But remember: fried eggplant absorbs a lot of fat.
Stuffed eggplants are a good idea for a family meal or a friends’ date. Not only are they delicious, but they also look very attractive. In today’s version I suggest to serve them with millet. I picked a small one – without any bitterness.
How to do it
Boil millet in a glass of water and leave it covered. Clean some of the tomatoes, half of the tofu and chives. Mix it with millet, sesame seeds, olive oil and spices. Drill the eggplant and it to the filling. Bake for 25 minutes in 180 °C. Instead of fresh tomatoes you can add dried ones and avocado.
