Sweet Potato Mash with Oyster Mushrooms
This year, I’m going to continue to experiment with vegetarian and vegan recipes. I like discovering new flavors and I’ve been trying to cut down on meat. Mushrooms are often an underestimated product but they are a good source of B vitamins and they also contain potassium, phosphorus, and magnesium. Lots of people often choose popular mushrooms but have you ever tried oyster mushrooms? Just fry them to get a really delicious meal 🙂
Preparation:
I diced the sweet potatoes and potatoes and then boiled them al dente in salted water. I drained them, added clarified butter, grated some orange peel and mashed until smooth. You can also fry it to make it brown.
I cut off the hard stalks from the oyster mushrooms, seasoned them with salt and coated them in a whisked egg and breadcrumbs. I fried the oyster mushrooms in a frying pan with hot clarified butter and put them on paper towels to remove excess fat.
I served the mashed potatoes and oyster mushrooms with fresh lettuce topped with lactose-free yogurt.
