A christmas eve mushroom soup with coconut milk and pumpkin
There is less than a week left until Christmas. That’s why I try to inspire you everyday with the recipes for meals I will be serving.
There is no Christmas Eve wihout a soup. It’s a Polish tradition. For some, Christmas dinner isn’t complete without it. Which soup though? It all depends on the region. The most popular one is borsch (beetroot soup with dumplings). Then we also have mushroom, fish and fruit soups.
What if we added something new to a traditional mushroom soup?
Christmas Eve mushroom soup with coconut milk and pumpkin
Let the mushrooms soak for 2 hours. When they are soft enough, cook them over low heat for 20 minutes, in the same water, covered. Add cleaned and peeled vegetables, pepper and bay leaf. Cook for half an hour. Strain the water and add coconut milk. Intensity of the flavour depends on how much milk you add. Combine milk and broth carefully. Season it with salt. Serve it with boiled or baked pumpkin – it’s a touch of sunlight in a soup :).
