HIT! Spinach cake with forest fruits and coconut foam

Do you know the moss cake from the pastry shop?

I do 🙂 and I was always wondering how to make this cake in a healthy version 🙂 Today  after many experiments I finally managed to do it and so i can share it with you 🙂

Because three times a charm right ? 🙂 I baked the spinach cake with the products i usually use in my kitchen.

HIT! Spinach cake with forest fruits and coconut foam.

Preparation:

Whisk the eggs with coconut sugar. Add flour (you can optionally try rice flour, which I often use for pastries), coconut oil, fresh spinach, lio shake spinach and baking powder. Mix it together.

Grease the round baking mold.  Pour the batter and bake for about 45 minutes in 180 degrees.

After baking, remove it from the oven and allow it to cool down, spoon out the first layer of dough and crumble it into a separate bowl

 

The next step is to make the foam. Take a can of cold milk, whisk it with sugar and a few drops of lime.Place the cream on the cake, add the crumbles and decorate it with forest fruits.

Serve cold, from the fridge.
