Best New Year’s Eve Appetizers!

The New Year is around the corner! Is it possible to start it having good fun and at the same time enjoy tasty and healthy snacks? You know me very well, so it’s no news that the answer is: YES! I always say that healthy eating can be pleasant, and you don’t have to give it up, even during New Year’s Eve parties.

To prove my words, I have prepared a set of recipes that you can treat your loved ones with while waiting for midnight! They include both sweet and savory dishes, so I believe there’s something for everyone. 🙂

 

Chocolate-dipped plums

 

 

Ingredients:

  • a handful of dried plums
  • 3 pieces dark chocolate
  • 1/4 cup coconut drink

 

Preparation:

I soaked the plums in hot water and left them for about 10 minutes. I melted the chocolate in a warm coconut drink. I drained the plums and patted them dry with a paper towel. I poured the chocolate mixture over the plums in chocolate and left them to cool.

 

Amaranth power balls with nuts

 

 

Ingredients:

  • a handful of dried, unsulphured dates
  • 1/2 handful cashews
  • 1/2 cup popped amaranths

 

Preparation: 

I soaked the dried dates in hot water and left them for about 10 minutes. Then I drained them and blended them with nuts. I added amaranth and mixed it all together. I formed balls from the mixture (if the mixture is too thick, you can add a little water).

 

Stuffed tomato

 

 

Ingredients:

  • 1 tomato
  • 1 teaspoon coconut oil
  • 2 eggs
  • sea salt
  • black pepper
  • 2 slices Parma ham
  • chives

 

Preparation:  

I cut the tomato in half and scooped out the pulp. I heated the oil in a pan, cracked the eggs, added salt, pepper, diced ham and tomato pulp. I mixed everything until the eggs were set. I put the scrambled eggs into the tomato halves. I topped the dish with chopped chives.

 

Date truffles

 

 

Ingredients:

  • a handful of dried, unsulphured dates
  • 1/2 handful almonds
  • 1/2 teaspoon cocoa
  • 1/4 lemon
  • cinnamon

 

Preparation:

I soaked the dates in hot water and left them for about 10 minutes. Then I blended the drained dates with chopped almonds, cocoa, lemon juice and cinnamon. I formed truffles from the mixture. A piece of good advice from me – put them in the fridge for a while, they taste best cold! 🙂

 

Guacamole with vegetables

 

 

Ingredients:

  • 1/2 avocado
  • 1/4 lemon
  • sea salt
  • pepper
  • 1 yellow bell pepper
  • 1 carrot

 

Preparation: 

I mashed the avocado with a fork. I added lemon juice, salt, pepper and mixed everything thoroughly. I served the guacamole with vegetables cut into sticks. It tastes perfect!

 

Salad with egg and mustard sauce

 

 

Ingredients:

  • 2 eggs
  • 1 tomato
  • 3 slices dry-cured ham
  • 3 dried tomatoes in oil
  • 2 handfuls rocket
  • 1 teaspoon mustard
  • 1 tablespoon olive oil
  • 1/4 lemon
  • sea salt
  • pepper
  • 1/2 tablespoon sunflower seeds

 

Preparation: 

I cooked the eggs hard-boiled and cut them into quarters. I cut the tomato and ham into cubes, and the dried tomatoes into strips. I put the rocket leaves on a plate and added the chopped ingredients. Next, I prepared the sauce by mixing the mustard with olive oil, lemon juice, salt and pepper. I poured the dressing over the salad and sprinkled the dish with sunflower seeds.

 

Spicy pumpkin cream soup with coconut milk

 

 

Ingredients:

  • 1 onion
  • 1/2 slice ginger
  • 1/4 chili pepper
  • 1 teaspoon clarified butter
  • 2 cup diced pumpkin
  • sea salt
  • powdered turmeric
  • 1/2 cup coconut drink
  • 1/2 cup water
  • 1/2 handful of almonds

 

Preparation:

I chopped the onion, ginger, and chili pepper. In a pot, I heated the oil in a pot and fried the chopped ingredients. I added the pumpkin, spices, coconut drink, water and cooked until the pumpkin was al dente. I blended the whole thing into a smooth cream (if it’s too thick for you, you can add more water). I sprinkled the cream soup with chopped almonds.

 

Cocoa muffins with raspberries

 

 

Ingredients:

  • 2 eggs
  • 1/2 cup coconut drink
  • 1/2 cup coconut flour
  • 1/2 tablespoon cocoa
  • 1/2 teaspoon baking powder
  • sea salt
  • 1 teaspoon clarified butter
  • 1  handful of raspberries
  • 1 teaspoon almond flakes

 

Preparation: 

I mixed the eggs with coconut milk, coconut flour, cocoa, baking powder and salt. I greased the muffin tin with melted butter. I put the mixture into the molds, adding raspberries at the end. I baked the muffins at 180°C for about 15 minutes. I sprinkled the cupcakes with almond flakes. Yummy!

 

Snickers ice cream

 

 

Ingredients:

  • vanilla pod
  • 1/4 cup millet groats
  • 1/2 handful dried, unsulphured 
  • 1/2 teaspoon coconut oil
  • 1 teaspoon eco cashew spread
  • 1/2 teaspoon cocoa powder
  • 1/4 handful of almonds

 

Preparation: 

I cut the vanilla pod in half and scraped out the seeds. I rinsed the groats several times under cold, running water and cooked according to the recipe on the package. In the meantime, I poured hot water over the dates and left them for about 15 minutes. I blended the cooked groats with drained dates, coconut oil, cashew spread, cocoa and vanilla seeds. I put the mixture into a container and sprinkled with chopped almonds. I put it in the freezer for a few hours to enjoy delicious homemade ice cream!

 

Marinated shrimp skewers

 

 

Ingredients:

  • 140 g tiger prawns
  • sea salt
  • 1/4 lemon
  • 1/2 teaspoon coconut oil
  • 1 garlic clove
  • a handful of fresh basil leaves
  • 1/2 teaspoon sesame seeds

 

Preparation: 

I started the preparation by marinating the prawns the night before. I sprinkled them with salt, lemon juice and melted oil. I added pressed garlic and mixed everything, then put it in the fridge overnight. I put the marinated shrimps on skewers and grilled them on a grilling pan on both sides until golden brown. I sprinkled the skewers with chopped basil and sesame seeds.
