Chicken in Porcini Sauce

Aah the wonderful fall season… The weather hasn’t been pretty lately but the rain can bring some good things, too. It makes mushrooms grow! Make sure you make use of your mushroom hunting yield to the full! How about chicken in mushroom sauce for dinner?

Preparation:

Dice the meat, season with salt and pepper. Clean the mushrooms, dice them, chop the dill and the onion, grate the carrots. Heat ghee in the frying pan, fry the onion, carrot, and chicken. After 5 minutes add the mushrooms, add a bit of water and cook with the lid on for about 10 -15 minutes. Stir in the dill, coconut milk and cook for a while. Add some more salt and pepper to taste.
