Chocolate Carrot Cake with a Banana

There are only a few days left to our holiday, Women’s Day. We obviously deserve special treatment for 365 days a year but still I encourage you to make sure this day is special and that you spend it with your loved ones. To make the celebration even more pleasant, I’ve prepared delicious sweets for you – a chocolate carrot cake with a banana.

 

Preparation:

I grated the carrots. Next, I whipped the egg whites with coconut sugar, then stirred in melted and cooled clarified butter, yolks, the flour, baking powder and combined everything. Then I mixed in the grated carrots, raisins and cinnamon. I melted the chocolate and added half of it to the dough, and used the other half to glaze the cake. I mixed the dough thoroughly and transferred it into a tin lined with baking paper, and baked the cake at 180°C for about 40-45 minutes. I left it to cool in the oven and then glazed it with the remaining chocolate, and decorated with the banana.
