Coconut Dhal with Lentils

Preparation:

Before cooking, I rinsed the rice 1-2 times under cold running water. I cooked red lentil seeds without soaking (for about 15 minutes with twice the amount of water compared to the amount of lentils).

I heated coconut oil in a pot, fried the diced onion, pressed garlic and rice. I added water and simmered the whole thing for about 5 minutes. Then I added the spices, cooked lentils and chopped tomatoes. I mixed all the ingredients thoroughly, poured in the coconut drink and stewed for 10 more minutes until the rice was soft.
