Cream of Zucchini with Mint
It’s getting nicer outside. The morning sun shining into the bedroom windows is probably the best alarm clock, wouldn’t you agree with me? 🙂 Before spring settles in your gardens, introduce it onto your plates. This creamy green soup,full of flavorful herbs, definitely makes for a good start.

Preparation:
I sliced the zucchini into slices and chopped the garlic. I heated clarified butter in a pot and fried the garlic and zucchini. I poured water over the vegetables, added the spices and boiled. I blended the soup with fresh mint and parsley. I added a little water to get the right consistency and heated it up.
To top it off, I sprinkled the soup with crumbled feta cheese.
