Flavorful Pumpkin & Chickpea Curry

Preparation:
I rinsed the rice twice under cold running water. Then I cooked it following the recipe on the package, making sure not to overcook it. I heated the oil in a pan and fried the diced onion and grated ginger. I added the chickpeas, diced pumpkin, coconut milk and spices, and simmered everything until the pumpkin softened. I also added a little water as it was too thick. In the end, I sprinkled the dish with chopped cilantro and served it with cooked rice.
