Sweet Potato, Parsnip and Jerusalem Artichoke Cream Soup

Although I am often on the road, healthy meals still play a key part in my life. I always carry packed lunch and quick snacks – even when I travel. Those who know me, know it best ?. I like to make sure that I have a warm meal regardless of circumstances and trips. Today I have a recipe for a delicious soup made of sweet potatoes, parsnip and Jerusalem artichoke.

 

Preparation:

I peeled the onion, diced it and fried in oil. I peeled and washed the sweet potatoes, parsnip and Jerusalem artichokes. Then I cooked with salt, pepper, and the remaining spices and blended until smooth. I sprinkled the soup with pumpkin seeds.
