Grilled Turkey with Parsley Pesto

The weather is beautiful and just perfect to start the barbecue season. Remember that you can prepare lots of healthy grilled dishes! Below you will find one of my suggestions – grilled turkey naturally served with fresh vegetables. You can prepare this dish on a grill pan, barbecue or even an electric grill so the recipe is really versatile. Grilled dishes are most often associated with products that are fat and heavy on our stomach but remember that it does not have to be this way – when we cook we are only limited by our imagination 😉 

 

Preparation:

I sprinkled the meat with soy sauce the day before, seasoned it with pepper and put it in the fridge overnight. I prepared the pesto: I blended the chopped parsley with pressed garlic, nuts, lemon juice, olive oil and salt (if necessary, add a little water to get the right consistency). I grilled the marinated meat on both sides until it was golden brown. I mixed the rocket with diced pepper, crushed nuts, olive oil, salt and pepper.

I put the pesto on the grilled turkey and served it with the salad 🙂
