Salmon salad with Chinese noodles

Salmon salad with Chinese noodles

Do not confuse Chinese noodles with rice and soy noodles, because the first one has much more to offer. Often they include green peas, buckwheat, mung beans, and sometimes even green tea! Rich composition and aroma will add color to every meal, and quick preparation will convince you to buy it quickly.

Ingredients (for 2-3 people)

  • 300 g of salmon fillet
  • 150 g of Chinese noodle
  • 1 glass of cherry tomatoes
  • 2 glasses of spinach (about 3-4 handfuls)
  • about 5 tablespoons of soy sauce
  • a pinch of chilli
  • a pinch of basil
  • 2 avocados
  • 2 tablespoons of white sesame seeds
  • fresh coriander leaves
  • a few drops of lemon
  • pepper for seasoning

Preparation:

Wash the salmon thoroughly, place it in a bowl and add soy sauce, a few drops of lemon and pepper and place it in the fridge for about 1-2 hours. Pour boiling water on the noodles and let it rest for a few minutes (according to the recipe on the packaging). Take the salmon out of the fridge and cook it for about 18 minutes. Wash and dry the spinach, split the fish into portions and cut the avocado and cherry tomatoes. Place everything into a bowl and sprinkled with sesame seeds, at the end add the dressing  (soy sauce, chili, basil, pepper, coriander leaves, lemon).
