Buckwheat pancakes with beetroot and avocado

How about pancakes for lunch?
Who does not like pancakes :), so why not?

My suggestion is a gluten-free pancakes with season  “contribution”. As you probably know I adore beetroots and today I will mix beetroot with avocado.

Avocado is important >primarily because of the presence of oleic acid, which among other values >reducing the level of cholesterol. In avocado we can find vitamin B1, B2, B3, C, E, K, folic acid, copper, phosphorus, iron, potassium, zinc, fiber, >omega-6 fatty acid. The fact is that the avocado has a high calorific value>, but it contains fats that are beneficial for our body.

Buckwheat pancakes with beetroot and avocado

Pancakes preparation:

All the ingredients for the dough mix in a blender. In the pan melt the coconut oil, Add the dough and fry for a few minutes, then flip the pancake and fry on the other side.

In the meantime, prepare a >dressing by mixing all products.

Place the pieces of >diced >beet, >avocado and rucola ont he ready pancake. Add dressing and sprinkle >with walnuts.
