CREAMY SWEET POTATO SOUP

I’m back home from another trip, I leave my suitcase wherever – unpacking can wait, my empty stomach can’t 🙂

I put on comfy sweatpants, I take off my makeup and… here comes the question: what to eat? Something quick and stodgy!

Why do I like creamy vegetable soups so much?

  • they are easily digested
  • they are rich in valuable minerals
  • they warm you up
  • they make you feel satiated very quickly
  • they make for a perfect athletes’ meal (a runny meal while you’re eating carbs)
  • they are easy to preapre
  • they are delicious! 🙂

Time: 20 minutes

Recipe serves: 2-3 people

Preheat a pan and melt coconut oil. Add onion and garlic and let it simmer for a little while. If you like it to be hot – add grated ginger. Put diced potatoes and celery to a pot and cover it with broth/water. Add spices. Boil for 15 minutes, covered. Then, add onion, garlic and ginger. Blend it all, until it’s smooth. You can sprinkle it with almond flakes.

One, two three and it’s ready!
