Mexican Barley Risotto with Vegetables and Mozzarella
Do you like beans? It’s worth introducing it into your daily menu because it’s rich in vegetable protein as well as lots of vitamins and minerals. Today I have a recipe for a nutritious Mexican style dish, perfect for dinner 🙂
Preparation:
I rinsed the groats under cold running water and cooked it. I chopped the onion and garlic, and fried them in hot oil. Then I added red pepper cut into strips, grated zucchini, and rinsed red and white beans. Next, I added the tomato concentrate and stirred in the cooked groats, salt, and pepper. At the end I topped the barley risotto with grated mozzarella 🙂
