POTATO SALAD FOR THOSE WHO ARE BUSY!

We tend to forget about the nutritional factors of our Polish potatoes. That’s a shame because they’re a valuable source of vitamins and minerals.

Potatoes are easily digested, low in calories and base-forming.

In this recipe I added potatoes to a salad – it would make for a good meal for those who are busy and active.

Salad with potatos, capers and corriander.

Clean the potatoes, score the skin and boil them. Take the skin off and slice them. Mix them with drained capers and finely chopped onions. Make a sauce out of lemon juice, mustard, spices and olive oil.

It tastes the best right after a training. In winter it’s best when served hot.

Why is it good after a physical activity?

Because potatoes have high glycemic index. In addition, they’re rich in POTASIUM – highly recommended for runners.
