Pumpkin Soup with Nuts
Nothing can beat a plate of hot soup with turmeric and ginger after a long autumn walk. When the days become cold I often prepare thick creamy soups for lunch or dinner. I always try to flavour them with as many health-promoting and immunity boosting spices as possible ?
Preparation:
I diced the onion, pressed the garlic and grated the ginger. I heated the ghee in a pan and fried these ingredients. Then I peeled the potatoes and the pumpkin, cut them into pieces and cooked until tender. I blended the vegetables with the stock and the fried ingredients. Next, I brought the mixture to a boil, seasoned it with turmeric, salt, and pepper. I topped it off with chopped nuts and sesame seeds before serving ?
