Quinoa and pineapple
A perfect meal for your lunchbox! Great as elevenses between classes, for a short break at work and while travelling. The ingredients stay fresh for a long time and will surely satisfy your hunger.
Preparation:
I cooked quinoa following the recipe on the packaging. I recommend the one from Foods by Ann store as the addition of vegetables enriches the taste perfectly. I drained the water off, cut celery into small pieces, sliced radishes and chopped coriander. Then I cut pineapple finely and mixed all these ingredients with quinoa. I prepared the sauce by mixing olive oil, honey, lemon juice, thyme, sea salt, black pepper and curry. I poured the sauce over the salad and topped everything with nuts.
