Red rice risotto with chanterelles and pumpkin
On the Polish market, you can buy several types of rice. Each of them has “something” else to offer.
Personally, today im cooking risotto with red rice. Why? Because red rice is recommend especially to athletes. Red rice improves vitality , it is easy to digest and has a lower GI than white rice . This helps to feel satiated longer. It is recommended for allergy sufferers , good for the heart and nervous system . With fiber , it regulates the digestive system . It contains vitamins A, D, E, magnesium, zinc, iron. Moreover, it is very tasty . It has a sweet , slightly nutty flavor . It is a hard rice , so you need to cook it longer than, for example . White rice.
Red rice risotto with chanterelles and pumpkin
Preparation:
Preheat the oven up to 180 degrees, cut the pumpkin, sprinkle it with olive oil and oregano, place it in the oven. Bake on the top shelf for about 25 miutes.
In the meantime, cook the rice with water ( ratio of 1: 2), add salt. Cook for approx. 30 minutes on low heat (red rice need to cook longer).
Wash the chanterelles and fry it on a pan with olive oil
Add the rice to the mushrooms , add the olive oil , oregano , turmeric , pepper and salt . At the end add the pumpkin .
Ready.
