Rice Pudding with Cherry Sauce
Do you sometimes crave something sweet that will delight you with its taste and smell? Imagine a creamy rice pudding that gains an exceptional depth of flavor thanks to the notes of vanilla and coconut. And to top it off, cherry sauce that’s juicy and slightly sour, which perfectly breaks the sweetness of the dish. Preparation:
First, I rinsed the rice thoroughly under cold, running water. Then I cooked it in the coconut drink following the instructions on the packaging. When the rice was soft and had absorbed all the liquid, I added vanilla extract, a pinch of salt, coconut milk and honey. I mixed everything thoroughly until all the ingredients were combined.
In the meantime, I prepared the cherry sauce. I threw the cherries into a pot, added a little water and cooked until they released their juice. I mixed the potato flour with a few tablespoons of water and added it to the pot, stirring vigorously.
Finally, I transferred the pudding into bowls, poured the thick cherry sauce over the pudding and sprinkled with almond flakes.
