Christmas Roast Chicken with Chestnuts

Are you counting down the days to Christmas? I can’t wait! ? And of course in the meantime I keep creating new recipes for the Christmas table. Today I have an idea for chicken with chestnuts which is great for Christmas Day and Boxing Day. And if you are looking for other ideas for chestnuts, you must have a look HERE.

 

Preparation:

I cleaned the chicken, dried it, rubbed it with the spices both on the inside and outside. I cut the garlic and onions, rubbed the chicken with them and put them inside. I stuffed the meat with rosemary sprigs and lemon cut into wedges. I roasted the chicken at 180°C for about 1,5 hours. You can put a bowl with water on the bottom shelf of the oven to prevent the meat from drying out. I also basted the chicken from time to time. Then I cut the chestnuts and roasted them for about 20 minutes. You can also buy ready-made chestnuts and put them inside the chicken for the last 10 minutes of roasting. I sprinkled my chestnuts with salt and cinnamon.
