Salmon in Teriyaki-Style Sauce with Broad Beans
It’s time for some Asian flavors in the kitchen! Salmon is a real treasure trove of healthy nutrients, and above all of omega-3 fatty acids which support the functioning of the nervous and immune systems. And of course I serve it with a portion of seasonal vegetables, i.e. broad beans accompanied by the exotic avocado ? I adore such unusual combinations!
Preparation:
To prepare the marinade I combined soy sauce, olive oil, lemon juice, honey, pressed garlic, and sesame seeds. Then I poured half of the marinade over the salmon and let it rest for about an hour. Then I put the salmon on the baking tray and roasted it at 250°C for about 7 minutes. I poured the rest of the marinade into a small saucepan and simmered it without the lid until it thickened.
I cooked the rice following to the recipe on the package. In the meantime I cooked the broad beans until tender and popped them out of their skins. I put the rice and fish into a bowl, added the broad beans and sliced avocado on top. I poured the thick sauce over the salmon.
