Sandwiches with Pepper and Chickpea Spread
Can a sandwich be a healthy meal? Of course they can! It all depends on what ingredients you use to make them. I wrote more about it HERE. And today I have a recipe idea for you to prepare a fully plant-based meal – sandwiches with chickpea vegetable

Preparation:
I drained the chickpeas from the brine and rinsed them under running water. I chopped the onion and garlic and cut the pepper into small cubes. Then I heated the clarified butter in a pan, fried the chopped vegetables and left them to cool for a few minutes.
I blended the chickpeas with cooled vegetables into a smooth spread (if necessary, you can add a little water to obtain the right consistency). I seasoned it with salt, pepper, and cumin.
I served the spread with gluten-free whole grain bread, chopped chives, and pumpkin seeds 🙂
