Christmas Meatless Sauerkraut with Porcini Mushrooms
I have prepared yet another Christmas recipe for you. This holiday season I’m willing to try new, innovative dishes, but I am just as eager to prepare traditional recipes. Just like sauerkraut with mushrooms which must appear on my Christmas table. Remember that such sauerkraut tastes best 2-3 days after being cooked, so make sure to find some time to prepare it a few days before Christmas Eve.
Preparation:
I soaked the porcini mushrooms overnight. Then I cooked them in the same water for about 25 minutes until they were tender. When cooked, I strained them and cut into smaller pieces. I added chopped sauerkraut to the porcini broth and cooked it for about 20 minutes. In the meantime I grated the carrot and added it to the sauerkraut at the end of the cooking time. I chopped the onion finely and slightly fried it on melted clarified butter and added it to the sauerkraut along with the mushrooms. In the end I added the spices to taste.
