Asparagus with a poached egg :)
The upcoming asparagus season is pretty short so you have to make the most of it.
I never get bored with them, so today we again ate these lovely, interesting vegetables with relish.
First, I thoroughly washed a bunch of asparagus. Then I cut the tips off before steaming the vegetables. In the meantime, I boiled a fairly wide pot of water with a big splash of wine vinegar, and gently cracked an egg into a bowl.
When the water started to bubble hard, I turned down the heat and used a tablespoon to make circles in the boiling water, while holding the bowl with the egg in the other hand.
When I managed to create a sort of a whirlpool – or a siphon – in the pot, I quickly poured the egg into its center. I “organized” the egg white in such a way so that all of it was close to the yolk. After exactly 2.5 minutes, I had a poached egg looking like a mozzarella ball, though tasting even better :).
I stir-fried the asparagus in coconut butter, added thyme, then coriander, and served it with the poached egg 🙂
