Vegetable casserole
Finally Im back home after a hectic September 🙂
I missed my home, healthy dinners and new culinary ideas! This time … its casserole. Very simple, but delicious casserole. Husband ate it and he couldn’t believe that the casserole can be made in a healthy version. Another advantage is the taste and cheap products. For this casserole I used vegetables currently available at every grocery store. I would recommend it, not only for special occasions 🙂
Vegetable casserole
Very carefully wash zucchini and tomatoes, then soak it in baking soda. Peel the sweet potato, dice it together with zucchini, tomatoes and mozzarella cheese (tofu). Place the vegetables in the casserole dish, adding the cheese here and there. Sprinkle with spices and olive oil and bake for about 40 minutes at 180 degrees. This time I combined extra protein with carbohydrates, that is why I reccomend to eat this dish very slowly, carefully chewing. Don’t drink after the meal in order for digestion to function properly.
