Zucchini Spaghetti with Fried Egg
Vegetables on your plate? Sure! What’s so special about it? Following the Boost Your Health! campaign, I have a recipe for delicious vegetable pasta. Yes, vegetable, light and rich in nutrients.
During this challenge you’ve been able to find out how different products and diet ingredients affect your immune system. Today I want to show you another dish which combines the healthy power of several ingredients on one plate: vegetables, which stand for vitamins and antioxidants, an egg, which means protein, iron, and selenium, olive oil which is high in polyunsaturated fatty acids, various spices which contain powerful antioxidants. Sounds good and healthy, doesn’t it?
Make sure your diet is diverse so that both you and your loved ones get all the valuable ingredients to maintain body balance and health. Don’t forget that this type of dish also pleases your eyes as it looks simply amazing. 🙂
Preparation:
I cleaned the zucchini thoroughly and cut off both ends. I always use a special spiralizer tool to prepare vegetable zucchini 🙂 I put the pasta into a bowl, added the olive oil, spics and mustard. Then I slightly fired it on a pan until it was al dente. I added halved cherry tomatoes and rocket leaves. At the end I fried the egg and put it right on top of the vegetables.
