MILLET BANANA BROWNIE
Oops! A call from friends that they are just passing through Munich. I need to treat them to something yummy and healthy of course :)!
A quick search in my drawers, a moment to think and a decision: brownie! This time on a millet base.
Flush millet with warm water, twice. Boil in 3 glasses of water. When it soaks the whole water, add one more glass and mix.
When the millet has cooled down add: cocoa, 2 eggs (linseed/chia seeds for those with allergy), coconut oil, baking soda and a banana. Blend it all. Add pine nuts, goji berries and spices at the end. Mix it all with a spoon now.
Put parchment paper on your baking mold. Bake it for 30-40 minutes in 180 °C (air flow). Leave it in the oven to cool down. I served it with a homemade berries’ jam (without sugar).
YUMMY… AND HEALTHY AS USUAL! 😉
