A SCORZONERA/BLACK OSYTER PLANT PUREE WITH FISH

Black oyster plant? Scorzonera?

Sounds creepy! But believe me – there’s nothing to be afraid of!

Black salsify is a vegetable known for ages. Don’t be fooled by the looks of it. You’ll change your mind right after you peel and eat it, especially if you’re a fan of asparagus. I’ll definitely prepare it a couple more times this fall as it’s both yummy and rich in essential nutrients: vitamins (E, B1, B2 and C) and elements (iron, potassium, magnesium, sodium, calcium and carotene).

Peel scorzonera. Hold it vertically and peel it from top to bottom. Clean it and sprinkle it with lemon. Cook it until it’s soft, mash it and add the rest of the ingredients. Add linseed oil at the end.

Put olive oil, salt, pepper and thyme into a bowl. Then put the fish inside and let it rest for a while, flipping it from one side to another. Cover it with sesame seeds.

Preheat the oven to 180 °C. Put your fish on a baking plate and bake for 20 minutes.
