Almond Pancakes with Apple Mousse

It’s Women’s Day tomorrow! Do you celebrate this holiday? I will definitely try to find some time for some simple pleasures, relaxation, just time for myself. A good day should start with a delicious and healthy breakfast. That’s why my suggestion is almond pancakes with apple mousse. This is definitely an idea for those who love sweet breakfasts, but are looking for an alternative to traditional porridge. 🙂

 

Preparation:

I started by preparing the mousse: I washed, peeled and cut the apples into thin slices. I stewed it in a saucepan with the lid on, adding water in the meantime and a pinch of cinnamon and cloves. I also sprinkled them with lemon juice. After preparing the mousse, I mixed the ingredients for the pancakes (flour, eggs, cinnamon and salt). I heated the oil in a frying pan and fried the pancakes on both sides until golden. I served the pancakes with apple mousse, poured with maple syrup and sprinkled with almonds.
