
Amaranth Energy Balls with Nuts
Energy balls – you’ve already seen several versions of energy balls in my recipes! I love each of them and I am constantly looking for new ingredients and combinations to create these quick snacks. I have recently shared a recipe with oat flour and coconut flour (you can find it HERE), and today it’s time for balls with amaranth!
They are delicious, easy to make, nutritious, and also dairy- and gluten-free, so they can be used by people with allergies or celiac disease.
Preparation:
I soaked the dried dates in hot water for about 10 minutes. Then I drained them and blended them with the nuts. I added amaranth and mixed it all together. Next I formed balls from the mixture (if it is too thick, you can add a little water). Finally, I put the balls in the fridge to chill for about 5 minutes. Enjoy!
