Apricot cake

I declare an apricot and peach season open now 🙂 I always recommend to eat seasonal and local fruits that’s why today a star in my kitchen is apricot.

Why is it worth to eat apricots? They are a good source of beta- carotene which gives this beautiful color to fruit.  Moreover apricots are a good source of potassium, iron, magnesium, calcium as well as vitamin C, PP and B-group vitamins.

My friends are coming today and because “Guest in house, God in house” I would like to offer them the most hospitable welcome and to serve the delicious apricot cake 🙂

PREPARATION:

Soak the dates in hot water and wash the apricots. Mix dates and apricots together in a blender and then combine with the rest of the ingredients in a bowl. Transfer the dough into a small loaf pan and place diced apricots on top. Bake it at 180°C for about 40 minutes. After cooling, serve to guests.

If you want the cake to be more sweet, add 50 g of coconut sugar.
