Millet Muffins with raspberries
I didnt post any millet recipe in here for a while, so its time to make it up to you!
I love to create sweet recipes with millet, so today let’s try muffins. Feel free to pack them into your child lunchbox. Millet provides us with many valuable components , such as iron , calcium, potassium, vitamin B and zinc – necessary for athletes. It is also high in protein and easy to digest , so its perfect for people who have problems with liver, intestines or pancreas . It helps to regulate the cholesterol levels. It is alkaline, so its recommended in de-acidifying diet.However, millet slows down thyroid hormone , so dont eat it every day . Millet has a pretty high glycemic index – over 70 ( to compare brown rice glycemic index is 50 ) , so its quickly raising the blood sugar levels
But once in a while – why not ? 🙂
Millet muffins with raspberries
Preparations:
Cook millet, add coconut oil and the pre-soaked dates. Wait until the water will sink in, blend it all together and add grated apple, orange juice and flax seed . Leave the hot mix under the cover until juice will be absorbed and until the mixture will cool down. Preheat the oven to 180 degrees. Put the dough into the muffins baking tray and bake for about 30 minutes . Once its done baking, leave the muffins in the oven for several minutes
