Baked Eggs in Bell Peppers
It’s time for another recipe for a healthy and filling breakfast! Eggs and peppers play the main part here. The dish requires a bit more time for baking but remember that you can use these extra minutes to your advantage, for example by doing a morning workout with my Diet & Training by Ann app (HERE)! A short training shot, stretching or yoga, and then a delicious, nutritious breakfast – what do you say?
Preparation:
I cut the pepper in half, removed the core and put it into an ovenproof dish. I put an egg in each half, sprinkled it with salt and pepper. I baked the peppers at 180°C, covered, until the egg whites were cut.
I mixed the lamb’s lettuce with diced dried tomatoes, put it on a plate and placed the pepper on it. I sprinkled it all with sunflower seeds and chopped parsley. Bon Appetit!
