Beetroot and Blackcurrant Mousse

Did you know that currants belong to fruits with the highest antioxidant content? They are a great source of vitamin C! I balanced their sour taste with the addition of sweet banana and beetroot. This intensely pink mousse will be a great idea for a summer, refreshing dessert – just cool it in the fridge before serving.

If so far your children have been quite skeptical about the taste of beetroot, this recipe can change that.

 

Preparation:

I blended the beetroot with avocado, banana, and currant juice. I put the mousse in a bowl and sprinkled it with fresh currants.
